The garden at the Work Ethic Camp in McCook, NE, has had a bountiful harvest this year. Corporal Deb Swanson, with the help of 3 incarcerated men, planted a wide variety of produce including corn, cucumber, zucchini, tomatoes, watermelon, pumpkins, potatoes, carrots, onion, chives and rhubarb. The produce gets put to use in the kitchen for special recipes like fried zucchini, cucumber salad and rhubarb crisp.
